A Simple, Double-Almond Sugar Cookie Recipe

If you love buying almond sugar cookies from a local bakery, why not also try making them yourself? Cookies are one of the simplest things to bake, and the typical recipe makes quite a few, so you can share them with friends and neighbors. Here is a simple, easy-to-follow almond sugar cookie recipe that actually contains both almond extract and toasted almonds for a double almond experience.

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 cup almond slivers
  • Additional sugar for rolling cookies

Directions:

1. Spread the almonds out on a baking sheet, and place the baking sheet in a preheated 300-degree F oven. Bake for 10 minutes, tossing the almonds around once during baking. Remove the almonds from the oven; they should be slightly golden brown and toasted. Set them aside to cool.

2. Turn your oven up to 350 degrees F to preheat it for the cookies.

3. Combine the flour, baking powder, and salt in a medium bowl, and whisk them together well to combine. Set this bowl aside.

4. In a second bowl, combine the butter and 3/4 cup of white sugar. Beat together on medium speed until fluffy and creamy. 

5. Add the egg, vanilla, and almond extract to the creamed butter and sugar mixture, and mix well.

6. Scrape down the sides of the bowl, and add the flour mixture to the creamed butter mixture. Stir gently by hand to moisten the flour, and then mix on medium for about 1 minute or until the dough is combined and uniform.

7. Scoop the dough out by teaspoons, and roll each teaspoon of dough into a ball. Then, roll each ball in white sugar and spread the balls out on ungreased baking sheets, leaving at least 2 inches between the balls. 

8. Press three or four toasted almond slivers into the top of each cookie. The balls should be pressed down a little, but not entirely flattened after you do this.

9. Bake the cookies for 10 - 12 minutes at 350 degrees F. 

10. Let the cookies cool on the baking sheets for 10 minutes, and then move them to a wire rack to continue cooling.

This recipe should make about 3 dozen almond sugar cookies. They're delicious alongside a cup of coffee or tea. Enjoy!
